How Rum is made
In order to make rum, the molasses is fermented. Molasses is the thick syrup resulting from the crystallisation of the juice from the sugar cane.
The “wash” that results from this fermentation is then distilled to produce a sharp, clear spirit at about 80% abv. White rum is basically this spirit diluted to 40% abv, although there are some aged white rums which maintain their clarity by charcoal filtering. Golden rums are aged in oak casks and take their colour from that, although some have caramel added to create a uniform colour.
What does rum taste like?
Rum has a rich Demerara sugar taste, and the rum that we sell has strong notes of vanilla and gingerbread. There is a kick to it as it is 40%abv but on the whole it is smooth and pleasant, and it is possible to drink it just with ice.
