It is picnic season, so pack up a feast and enjoy the sunshine. This pasta salad contains tangy and sweet flavours from our Calamansi vinegar, as well as salty flavours from the feta cheese.

Serves 10 - Time: 35 minutes

Salad Dressing:

1/3 cup Il Gusto Olive Oil

2 tablespoons fresh squeezed lemon juice

2 tablespoons Il Gusto Calamansi Vinegar

2 tsp Minced Garlic

2 tsp Dried Oregano

1 tsp Dried Basil

Salt and Pepper

Pasta and salad:

350g Dried Penna Pasta

1 large cucumber

250g Cherry tomatoes

½ cup pitted Black Olives

1 pack of Feta Cheese

Fresh Parsley for garnish

Method

Boil the pasta in a large pot of salted water until it is al dente. Drain in a colander, rinse under cold water and leave to cool. Pour the pasta into a large mixing bowl. Cut the cucumber into cubes, mince the garlic and quarter the tomatoes and halve the Olives, add them to the pasta. Make the salad dressing by combing the ingredients in a jug and pour the dressing over the pasta and mix well. Crumble over the feta cheese and sprinkle over the chopped parsley.
